Summer Noodle Salad

Whip up this zingy Summer Noodle Salad and let’s turn the heat into a treat! Packed with crunch, punch, and a whole lotta munch.

 

Ingredients:

  • 2 small carrots, thinly sliced
  • 1 cup white cabbage, finely chopped
  • 1/3 cup organic frozen edamame
  • 1 medium red pepper, diced
  • 10 cashews
  • 1 small jalapeño (de-seed for less kick!)
  • 1/2 bag of Ripe Nutrition noodles @ripe_lifestyle
  • 1/2 raw zucchini, sliced like the carrot
  • 1 tbsp sesame oil
  • Dash of cayenne pepper
  • 1 tsp sesame seeds

 

Dressing:

  • 2.5 tbsp coconut aminos
  • 1.5 tbsp rice vinegar
  • 1 tbsp fresh chopped ginger
  • Salt and pepper to taste

 
Directions:

  1. Cook noodles as directed.
  2. Sauté edamame, cashews, and optional snap peas in sesame oil with a hint of cayenne.
  3. Blend the dressing ingredients.
  4. Mix everything, top with fresh chopped ginger and sesame seeds.
  5. Enjoy the burst of summer in every bite!
Pro tip: Use scissors to cut noodles for easier mixing and munching!
