Blueberry Orange Muffin

This recipe will be on repeat in my house & hopefully in yours. It’s packed with protein, gluten-free & no refined sugar. Which means you can eat it guilt free.
Ingredients:
- 3 eggs (room temperature)
- 2 cups almond flour ( sifting is optional )
- 1 scoop vanilla protein (Pure Paleo DFH @coachchrissmits )
- 1/4 maple syrup
- 1/4 cup avocado oil or olive oil
- 1 tbsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup blueberries or wild blueberries frozen or fresh
- 1 large orange zest
Directions:
- Set oven at 350°.
- Mix in all your wet ingredients.
- Addin your dry ingredients.
- Fold in the blueberries at the orange zest.
- Scoop in a generous amount in each cupcake mold and cook in the oven for 20min. Do the toothpick test to make sure they are cooked through.
Top It Off With:
- Coconut sugar (optional)
